Pumpkin Love

Otoño is my very favorite season. I could literally name 100 things I love about this time of year, but today I want to talk about just one – calabaza-flavored foods.

October has barely started, the leaves are still mostly on the trees, yet I have already begun to indulge in what can only be described as pumpkin love. Things I’ve eaten so far:

  1. Pumpkin soup. IS AWESOME. I had it in Brasil and I was hesitant but it was the best thing hands down- had it again here in the states and again different recipe but same great taste. In search of a recipe now but when I find it I’ll share

    • @ Aisha – I don’t think I’ve had pumpkin soup. I’ve had butternut squash soup which is delicious, and I’m thinking probably similar.

  2. Wow. You’ve eaten a lot of pumpkin. We made two pumpkin pies yesterday…the kids said it tasted like mashed potatoes. My thought…’I must make some good mashed potatoes.’

    I love pumpkin too! You have to try a Starbucks Pumpkin Soy Latte! I also make a delicous pumpkin cheesecake. I’ll track down the recipe if you are interested! And last but not least, I have a Honduran friend who makes amazing chicken soup using chunks of corn, yuca, and pumpkin. There are other ingredients too, but it’s the chunks of pumpkin that add a sweet creaminess to it! Wish I had some on a cold rainy day like today : (

  4. Ah mi Tracy!!! Dulce de Ayote! Una delicias Guanaca. Pumpkin Cheese Cake, soooo yummy.
    Y Pumpkin Soup, súper fácil y súper rica. Si quieres la receta let me know.

      • okis, this is the thing, I don’t follow recipes so I’ll give an idea: vegetable/chicken stock, cubed calabaza, onions, nutmeg, salt & pepper, butter.
        Melt butter, add onion and calabaza cubes. Cook until kinda soft (don’t let it brown, just cooked)
        Once cooked, place all that in blender with stock.
        Bring puree to a boil and add more stock if needed, add salt pepper and some nutmeg. ANd Voilá!

  5. Tracy, I love pumpkin tambien!! Pumpkin pie has to be my all time favorite thought, I’m so looking forward to Thanksgiving time to bake some!1

    Have you tried Calabaza en tacha? basically you cook the pumpkin with some water, canela and pilloncillo, tastes delicious. I use to spend time with my grandma sitting on the kitchen table eating pumpkin seeds until we got stomachaches I loved it!!

    • @ Silvia – What a sweet memory :) I’ve never tried calabaza en tacha, but it sounds very similar to the way I make sweet potatoes.

  6. Me too! The sad thing is my esposo doesn’t like ANYTHING pumpkin (or squash), but that doesn’t stop me from cooking/baking with it, especially during fall! Then I end up eating it by myself (which can be both a good and bad thing…). And although I’m not a Starbucks fan, I always get excited when the pumpkin spice lattes make their yearly appearance. :-)

  9. Pumpkin soup too! Ours has beef, chicken, yucca, fideos, carrots, repollo, cloves, habaneros, and pumpkin of course! Is one of my favorites soups!

  10. Tracy, do you have Trader Joe’s market over there? I’m not in love with all things pumpkin, I like just a couple of things and at TJs they have Pumpkin flavored pancake mix! It’s so delicious!!! They probably have it at other markets now!?

    • @ Dariela – There isn’t a Trader Joe’s close by, but I’ve been to them before… I made homemade pumpkin pancakes a couple weeks ago! :)

  11. Ok, I came back because I realized I do like more pumpkin things than I thought I did. After reading you post I casually ran into pumpkin talk and recipes in other blogs and remembered I do love pumpkin bread and pumpkin soup (or butternut squash soup) and the pumpkin pancakes. It’s the pie and the lattes I don’t like!

    • @ Dariela – While I’ll eat pretty much pumpkin anything, I would also rate pie & lattes much lower on my favorites list. Pumpkin bread and pumpkin soup are much better!
